Hops and Craft Beer

Hop is one of the most important raw materials for beer brewing. From 1079, Germany added hops to prevent beer from spoiling before pasteurization was invented. Brewers use hops α-acid to inhibit bacteria in beer. Later, with the improvement of hops planting, hops became more and more fragrant. Now the aroma of hops is considered to be its even important character other than bitter taste.

The aroma of hops in beer also promoted modern craft beer culture movement. India pale ale (IPA) is the beer type which is most closely related to hops. High-quality hop is the key for breweries to brew nice IPA .

IPA is originated from British India in the 18th century. Those British who lived in India prefer Pale Ale. In order to prevent beer from spoiling during shipping from Britain to India, British brewers added a lot of hops in beer. Thats how India Pale Ale came to being.

IPA in the early period was famous for its strong bitterness, which was not liked by customers. As hops are planted in the United States, the aroma of new world hops is greatly increased, which makes IPA not only bitter, but fragrant as well. This new beer style was named American Style IPA.
